Salmon Cakes

Here is a quick, easy, and healthy recipe. My kids, husband, and I flipped over it. (Anna was shoving them in her mouth whole, and asking for more before she could swallow. 🙂 )

Ingredients:

Salmon Cakes:

3 tsp. olive oil
1 small onion finely chopped
fresh parsley
15 oz. can Salmon,drained
1 large egg, beaten
1 1/2 tsp. Dijon mustard
1 3/4 cups fresh whole wheat breadcrumbs
Fresh Ground Pepper

Dill Sauce:

1/4 cup mayonnaise
1/4 cup fat free plain yogurt
2 green onions, finely chopped
1 tbs. lemon juice
1 tbs. dill, finely chopped
* Mix all ingredients together

Directions:

Preheat oven to 450 degrees
Coat a baking sheet with Cooking Spray
Heat 1 1/2 tsp. olive oil in a large nonstick skillet
Saute’ onion until softened
Remove from heat and stir in parsley
Place salmon in a medium bowl. Add egg and mustard, mix well
Add onion mixture, breadcrumbs and pepper, mix well
Shape the mixture into patties
Heat remaining oil in the skillet. Add the patties and cook until the undersides are golden.
Using a spatula, turn the patties over onto the baking sheet.
Bake until golden brown, about 15 minutes
Serve With dill sauce
