From one of my favorite recipe books, Weight Watchers 5 ingredients 15 minute Cookbook, I have found another great recipe. The best part is how easy it is!
Ingredients:
4 (4 ounce) boneless skinless chicken breast
salt and pepper
2 tsp. olive oil
2 tbs. balsamic vinegar
1 tbs. Honey
2 tbs. chopped fresh or 2 tsp. dried basil
Directions:
Sprinkle both sides with salt and pepper. Heat oil in a large skillet over medium high heat, add chicken. Cook 5 minutes or until lightly browned. Turn chicken and cook 6 minutes or until chicken is cooked through. Stir in honey, vinegar, and basil, cook 1 minute.
Side Suggestion: Cous Cous, baked or sweet potato, broccoli, salad, or Asparagus.
It is so easy, so good, and good for you. (Only 161 calories, 3.7 grams fat, 4.6 carbs, 26 grams of protein, or 4 points for WW fans.) I love that most all the ingredients can be found in your pantry at any time. It makes it easy to pick up a pack of chicken, and you have dinner!
