Recipes…Black Bean Salsa

This is a recipe that Kelly K. (Journey’s with Kelly) made for us on our vacation. We inhaled it! It is delicious and healthy. It has a little kick, but not so much that your kids could not eat it. Thanks Kelly!

Ingredients:

Black Beans 2 cans (drained)
Frozen corn 1 pkg.
Diced tomato w/ chilies 1 can (mild is best for children. Use 1/2 of juice to start)
Picante Sauce 1/2 to 1 cup
Roma Tomato 2 (chopped)
Green Onion 3 to 4 (chopped)
Distilled White Vinegar 2 Tbl.
Fresh cilantro to taste (approx. 1/2 bunch, chopped very fine)
Cumin to taste
Garlic Powder to taste
Chili Powder to taste

Directions:

Mix all ingredients in a large Bowl. Served chilled is best as it allows all the flavors to blend. Serve with Tortilla chips
